Cooking 101

So, my peeps. Help a girlfriend out. I need some new dinner ideas. We are talking easy peesy lemon squeezy here. What are some easy, yet equally delicious meals that I can make?? It can be anything. Pastas, meats. Ooh, I have a bag of chicken in the freezer- QUICK! What should I do with it??? Oh, and it has to be dairy free. So no cheese or milk. Capeesh?? Go.

I like to put a frozen whole fryer chicken in the crockpot in the morning with garlic and onion and just let it cook. When its done I can turn it into anything I want to... chicken tacos, chicken salad for pitas, or barbecue chicken salad, just like it is with brown rice and broccoli, chicken noodle soup, you name it. If you want more specific recipes, email me. You can do the same thing with frozen chicken breasts too. My favorite is stir fry, with fresh veggies, or frozen mixes if that's easier. Chicken pesto pizza, with or without fresh mozzerella using a premade crust. Chicken pesto pasta. EASY! Cook your chicken and pasta and toss with a couple tablespoons of Classico brand pesto in the jar. Excellent!

One of our weekly "quick" dinners is to buy a bag of frozen meatballs, (their usually already cooked), heat them in the crock pot for an hour or two with a little bbq sauce on top. Then, I'm a huge fan of rice cookers-white rice, brown rice, jasmine rice, whatever you like, stick it in the rice cooker with water and in 20 min, whalaa!

mine is crock pot too, and SO good...you've probably had it with us. PUt the chicken in the crock pot (2-4 breasts). and put 3 cans of any kind of beans...we like black, and 2 cans of corn (or frozen corn), and a packet of taco seasoning (I use 2), and 1 cup of salsa. Leave it in the crock pot for all day, you know around 6 hours or so, then shred up the chicky breasts...they'll shred right apart. Then take out some for your kids, and leave some of it in the crock pot and add a brick of cream cheese. It's great with out it, but amazing with it. Then stir it and we eat it either in a tortilla with cheese (great without it too though...we were once dairy free) and sour cream, tomatoes and green onions. Or my kids like to dip chips in it. and you have left overs for a couple of days. SEroiusly it's soo good and easy we eat it ALL the time. Um, my sister is making a copy of my favorite recipie book, I'm going ot ask her to make an extra copy....you'll want it. It's only like $10 for the copy. We use it HONESTLY 3-4x a week. It's got tons of easy cheesy nice and breezy recipes. Hey, thanks again for letting us live with you this last week. It was fun...and SOO comfortable...but that damn cheesecake...guess who's up5lbs?! Yup, but I'm taking it off, plus 3 today! Downing the laxatives, running around the entire town 3x and weighin in naked at 4am (that's when i weigh the least) I'll win, don't worry!
